Healthy Grilled Cheese

I read about this in the book Deceptively Delicious, by Jessica Seinfeld and LOVE it. Dillon loves it too :) The book is all about sneaking veggies in to everyday stuff for picky children. Dillon isn't picky at all but grilled cheese is such an easy go-to meal that I find my self making it for the whole family quite often. It's also a favorite meal of mine :)

1/2 cup sweet potato puree/butternut squash puree or if you don't have either of those, use canned pumpkin.
1/2 cup shredded cheddar cheese, I prefer sharp
1 tablespoon butter or trans fat free soft spread

Mix the above ingredients together in a microwave safe dish. Microwaving the mixture is not in the book but I've found that the filling doesn't quite melt before the bread is toasted so I added this step. Melt in the microwave for about 15 to 20 seconds and then spread the mixture on whole wheat bread. Spray a pre heated pan with cooking spray and lay the sandwich in the pan (you can butter the bread if you want, but it's not needed). Spray the top half of the sandwich with cooking spray and toast both sides of the bread. Voila! You have grilled cheese with a veggie snuck in! Dillon gobbled this up and I have to say, it was a tasty alternative to grilled cheese for me as well.
