So, this morning I threw 4 smallish chicken breasts in the crock pot, poured a can of chicken broth over the top and sprinkled in some rotisserie seasoning. I had no clue how I was going to turn it into a meal, but I figured that would give me a start.
When I got home the chicken was SOOO tender. I cut it up into small pieces with a fork (don't ask me why - probably because I have a toddler) and then raided my pantry and found Knorr's Sides Plus Veggies - Roasted Chicken and Rice. It has a ton of veggies it it, but the sodium is a little high so it's not something I'd make daily. It took about 10 minutes to cook and I just added some of the chicken to it. Surprisingly, it was very good! I'll be buying that again!
2nd meal... Rosemary Chicken Salad Sandwiches :) We'll have those for lunch tomorrow.

I love it when you get more than one meal out of a crockpot dish. Fabulous time-savers they are!
