Go to Meals

I thought it would be a good post to list out a bunch of go to meals. We all have recipes for these (I hope!) but when you're stressed after a long day at work sometimes "What's for dinner?" is such a hard question to answer! Hopefully this list will help us all out the next time we're in a bind with hungry stomachs waiting.

Chicken Quesadillas - throw a pat of butter in a pan and heat, put the tortilla in throw some cheese in and defrost some pre-cooked chicken. YUM! I've found that you need to give the pan a quick wipe with a paper towel (don't burn yourself!) before adding new butter. Otherwise, you get a nasty burned taste to the next quesadilla.


Grilled Cheese and tomato soup

Tacos

Spaghetti

Grilled Peanut Butter (my husband likes this served with Chicken Noodle Soup)

Breakfast for dinner!
Spanish Rice with Chicken - I also use Spanish rice with refried beans and cheese wrapped in a tortilla for quick burritos.

Roast in the crock pot

Just about anything on the grill, we love premarinated pork loins

Hamsteaks in the oven with pineapple - I mix a tablespoon or so of brown sugar with some reserved pineapple juice and make a glaze too. Serve over rice

Stir fry (I usually have a bag of frozen stir fry veggies and just throw whatever meat I have in - chicken or beef). If I want to make fajitas I throw in a packet of taco seasoning and serve with tortillas, sour cream, salsa tomatoes rice... Can you tell we like Mexican? lol

Jambalaya

Taco Pie - I use this base recipe and add some kick with green chiles, corn, hot sauce - whatever. http://www.bettycrocker.com/Recipes/recipe.aspx?recipeId=35941

BBQ chicken pizza - I use corn tortillas, top it with bbq sauce, corn chopped red onion, chicken and cheese and pop it in the oven.

Meatloaf. For quick meatloaf bake individual ones in muffin tins.

Throw some chicken in a baking dish and top with salsa and bake.

Cream of something soup/Chicken and rice

Stroganoff

Chicken Rice Casserole - (cream of mushroom, cream of celery, milk, dry onion soup mix, rice and turkey)

Mac and Cheese

Meatball Sub Sandwich - meatballs are easy to make, or you can use premade frozen ones. Top with marinara (spaghetti sauce) on a hoagie bun and then a slice of provolone cheese (or whatever you have) and toast under the broiler for a bit.

Hot ham sandwich

Salmon cooked under the broiler topped with EVOO and dill

Chicken with BBQ sauce baked in the oven

Sloppy Joes - I add a bit of adobo sacue to kick it up a bit :)

Tortillini - the premade stuff, just boil and serve with marinara sauce
